Volare is a true Italian-style bar, born from the idea of celebrating the 1960s—the years of the economic boom, aperitifs, and snacks—where every detail is not left to chance but is meticulously curated. Every item inside the bar comes directly from that era: from the jukebox to the counter, from the payphone to the black-and-white television.
Volare offers a “old-school” Italian style of mixing drinks, rooted in the tradition of liqueurs, bitters, and aperitifs.

The cocktails, all easily replicable, use three or, at most, four ingredients.
At the core is a kind of "alcoholic archaeology," focused on the search for simplicity through the use of easily available ingredients.
A leap through time, a return to the future both in terms of experience and taste.

Peppe Doria

Giuseppe Doria, also known as “Peppe” Doria, is a Sicilian mixologist renowned for being the founder and owner of Bar Volare.
He boasts extensive experience, which began at the age of 14, in the restaurant and hospitality industry.
He has also gained experience in communications and revenue management.
His approach to mixing drinks is based on innovation and the creation of a complete sensory experience for the customer, combining the setting and environment with good drinking.

Roberto De Leonardis

Roberto De Leonardis is a mixologist at Bar Volare, with whom he has been collaborating since its opening in 2021. From Abruzzo, he began working in the restaurant industry from a young age—a journey that has led him to participate in various mixology events and contests both in Italy and abroad.
